Maryland Fried Chicken
While KFC dishes are made in pressure fryers, it must be remembered here that Colonel Sanders before transitioning to the KFC line of dishes, used the iron skillet to deep fry the chicken pieces. Get all necessary ingredients for preparing a chicken dish. Obviously, this means you need to have salt, pepper, flour, oil, chicken (cut in pieces) and some milk. If you so desire, you can also include 1 ½ cups of cream.
Mix the salt, pepper and flour in a sealable plastic bag. This mixture should be shaken well so that the flour mixes with the salt and pepper well.
Add the chicken pieces to milk in a bowl. Turn them over so the entire chicken gets a taste of the milk. Once this is done, you should add the chicken pieces to the flour mixture in the plastic sealable bag, after you drain off all the milk. Please note to drain off all the milk because without this it will be tough for you to get the proper taste of the fried chicken.
Double cook the chicken pieces in the skillet. Now, this is the most time-consuming part of the whole exercise. The first time you cook the chicken, you must cook it until the time it turns golden brown in color. Once this is done, you transfer the chicken from the skillet with the help of tongs and pour the fats in the skillet on to a heatproof bowl. After this is done, you should cook the chicken again for about 15 minutes and transfer the chicken to a platter.
Mix the flour mixture with the fats (Not all of them), add water (1/2 tablespoon) and whisk it so you get a thick and creamy sauce.
Phew! After this rather elaborate and complex process, you are finally done preparing Maryland Fried Chicken. No wonder Colonel Sanders opted for an easier alternative, but people who know chicken dishes well claim that the Maryland Fried Chicken is really how fried chicken dishes should taste.
