Fried Chicken Wings

There are many variations of fried chicken wings. There is the traditional way, the not so spicy version and of course the eye-watering, mouth burning spicy version. And there is also the oriental version; Thai or Chinese style fried chicken wings.

You can make it you own recipe by adding your favorite seasoning plus anything that is deep fried is usually delicious.

Let’s see how to make spicy fried chicken wings recipe which seems to be everyone’s favorite.

Ingredients for chicken fried wings:

2 pound chicken wings

2 tablespoon fresh lemon juice

1 cup all purpose flour

1 teaspoon each salt and paprika

1 teaspoon cayenne

1 ½ teaspoon freshly ground cumin (can used bottled ones)

1 ½ teaspoon freshly ground pepper

¾ teaspoon dried thyme

1 cup beer (avoid dark beer)

1 tablespoon vegetable oil

Oil for deep frying

Parsley for garnish

Method:

Clean chicken wings. Arrange them on a tray or dish. Sprinkle lemon juice, salt and pepper and let them marinate for about an hour in a refrigerator. Make sure you cover them with foil or plastic.

Now for the batter, whisk the flour with salt, paprika, cayenne, freshly ground cumin and pepper, and dried thyme in a large bowl. Make a well in the center. Add the beer and oil in a single stream gradually and whisk the mixture into a smooth batter. Rest the batter for an hour. Make sure to stir the batter before using it.

Note: Make the batter while the chicken is marinating in the refrigerator. You save time and both the chicken and batter will be ready for use in about an hour.

Heat the oil for deep frying. Don’t not smoke the oil but make sure it is hot enough to cook the chicken wings. Now dip the chicken in the batter and coat it thoroughly. Put them in hot oil and cook for 3 minutes or until they are golden brown. Keep turning them with tongs so that they cook well on all sides.

Place the chicken in a kitchen towel to drain excess oil. Sprinkle salt to taste and arrange them on a serving dish and garnish them with parsley sprigs.

Tip: Do not put all the chicken wings into the oil at the same time. That will reduce the temperature of the oil and will not cook the chicken well. More over the chicken might stick with one another and this can get quite messy. So fry the chicken wings in batches of 5.
