Chicken Fried Rice
If you are no in a mood or way to tired to cook a full dinner or you just don’t have the time then chicken fried rice is the best one dish meal you can serve your family. It’s easy to make and does not take too much of your time.
There are times when we have left over rice, chicken pieces and frozen vegetables in the refrigerator. And if this is the case then you are in luck as you can then prepare chicken fried rice in just few minutes. And you’re ready to eat a piping hot delicious meal.
You can also make chicken fried rice with freshly cooked rice and boiled chicken pieces but it will taste better with leftovers. So if you are planning to make this recipe tomorrow make sure to have some leftover rice, chicken and vegetables this evening!
As chicken fried rice has many variations throughout the world, let’s see an Indian style fried rice which is an easy and an interesting way of making the dish.
Ingredients:
1 ½ cup par cooked basmati rice (fragrant rice)
1 pound chicken cut into bite size pieces
1 cup Chicken stock
3 tbsp Vegetable oil
1 sliced onion
1 tbsp sliced green chilies (according to taste)
8-10 cloves and 2 cardamoms
1 tsp Chili and ½ tsp turmeric powder
4 Eggs
Freshly chopped cilantro leaves
Salt
Method:
Heat oil in large skillet and sauté onions and green chilies for some time. Once the onion turns translucent, add chicken pieces and sauté till it turns white. Now add chili powder, turmeric and salt and stir for some time. Add ½ cup water and cook till chicken pieces are done.
Now add cooked rice, cloves, cardamom and pour chicken stock over it. Mix well till all the ingredients are well blended.
Cover the lid and cook in medium high till chicken stock is absorbed and rice is fully done. Do not over cook the rice.
In another skillet, heat some oil, scramble eggs and season with salt. Now add this to rice and mix well. Garnish with chopped cilantro. Serve hot with onion wedges and salad.
