Chicken Fried Rice Recipe

Who isn’t aware of the famous chicken fried rice recipe? It is one of the most popular dishes from Chinese which is prepared all over the world. Of course with a lot of variation! Chicken fried rice is prepared differently in different parts of the world. People have added their own ingredients and flavor to make the recipe their own.

An authentic Chinese chicken fried rice recipe is nothing like you would get the USA or India or anywhere in Europe. The original fried rice recipe was prepared by locals in China from left over rice, vegetables and chicken. This was a meal that was quick to make and quite filling. It is usually a dish prepared in a jiffy to satisfy the hunger prangs any time of the day. It’s a complete meal so you don’t have to serve anything with it.

Let’s take a look at Chicken fried rice recipe. It’s simple and very delicious.

You need:

4 cups cold cooked rice

Cooked chicken pieces or you can also use shrimps or turkey

2 eggs

½ cup green peas (frozen)

1 diced onion

1 diced spring onion

For seasoning

Light soy sauce

Oyster sauce

Salt, pepper

Oil to stir fry

You can use the seasoning according to your taste preference.

Method:

Beat the eggs lightly with a fork or chopsticks; add a dash of salt and a little bit of oyster sauce for extra flavoring.

Heat a wok with oil. When the oil is hot pour the beaten eggs, cook for few seconds on one side then turn it over. Cook on the other side. Remove it aside, cut into strips and keep aside for later use.

Now add oil in wok if required, add diced onion, sauté for some time and set aside, do the same with green peas.

Add some oil in the same wok, put in the cooked rice and stir fry for some time. Now add soy sauce, oyster sauce, chicken pieces, sautéed onions and green peas and mix well. You can either add the green onions and the egg strips in the wok or use them as garnish.

Alternately, people in China usually mix the beaten egg along with the rice and vegetable mixture into the wok and then stir fry it till it’s lightly cooked. This gives the fried rice a very authentic sticky texture which is favored by the Chinese people.
